Recipe - Pumpkin French Toast Bake

This recipe is going to fill your house with wonderful smells! I found the recipe in the coupon section of Sunday’s paper last Fall.

When we make a recipe for the first time, we always follow the recipe to the letter. During the taste test, we make adjustments to the recipe, if necessary and I always write that down. Sometimes, the recipe stays the same. When we first tried this recipe, we felt that there wasn’t enough sausage. And there just was way too much bread for my 9” x 13” pan. So, I altered the recipe and used half of the pumpkin pie filling, half of the evaporated milk and half the bread. And added an apple. It now fits perfectly into my 9” x 13” glass pan

My altered recipe:
Pumpkin French Toast Bake
12 oz. Breakfast links
6 eggs
Use 15 oz. of 30 oz can pumpkin pie filling
Use 6 oz. of 12 oz. can evaporated milk
1 teaspoon cinnamon
1 teaspoon vanilla
8 slices white bread, cubed
1 apple, chopped
Confectioner’s sugar
Maple syrup
Makes 8 servings

DH cooked the sausages on the grill, which gave a real nice flavor. Used the altered recipe yesterday and we both thought it was excellent!

Love keeping up with you in sunny Florida while I freeze here in Wisconsin. By the way, what temp and how long do you bake the Pumpkin French Toast. Can't wait to try it.

Sue, let me know if you like the recipe. DH & I thought it was wonderful -- good enuf for company. I wish I could blow some of this warm weather up to you. Just remember, I have a lousy summer to go thru to get this wonderful winter.

Have to find time to sit down and write.

I would love to try that recipe, but Gom does not eat pumpkin! I find it so strange, as he loves sweet things!
Here in life Downunder, we are having 40+ degrees celsius, are currently having a massive thunderstorm, which increases the humidity... & it awful to live through!!
